MEET WITH KITARO OWNER, HEAD CHEF john

When John
Yi first becane a chef in 1984, sushi was not something Americans would get
excited about. Today, the story is quite different, said Yi, owner and head chef
of Kitaro Grill & Sushi Lounge in Lemont.
"I think in the last 10 to 15 years, it's been getting
more popular," said Yi, who along with his wife, Carrie, opened the Japanese
restaurant in February 2009.
Yi learned how to make sushi in Minnesota. He opened
his first restaurant, Tokyo Steakhouse in Oak Park, and then owned Hana East in
Chicago before coming to Lemont.
As a couple of regulars leave Kitaro, they smile, wave
and thank Yi by name. Yi then gives a slight bow and returns the thank
you.
